“COFFEE AT O CASTELO” BY PEDRO ARANTES, TOP 10 PORTUGAL, BOLS AROUND THE WORLD 2013

COFFEE AT O CASTELO

We love our coffee so why not to modernize a classic like an Expresso Martini providing it with a new twist, a modern view and taste. Hot or Cold, different flavours for cosmopolitan people: hot for the kick, cold more soothing... Boys like it hot, girls like it cold... have a go ;-)

INGREDIENTS:

30 ml Bols Genever
40 ml Bols Cacao Brown
40 ml kahlua
10 ml Grand Marnier Cordon Rouge
40 ml Expresso Coffee
1 gelatin sheet
0.5 grs Sodium Alginate
1 grs Calcium clorur
8 grs white sugar
45 cl still water
1 orange zest

GARNISH: Cacao and coffee foam with coffee pearls on top.


METHOD

THE FOAM: In the Isi machine, place the gelatin sheet diluted in 10 ml of expresso coffee; 20ml of double cream, 10 ml Bols Cacao Brown; 10 ml Kahlua; 5 cl still water and 8 grs of white sugar. place 2 CO2 capsules and refrigerate until very cold.

THE COFFEE PEARLS: 10 ml espresso coffee; 10 ml kahlua; 10 ml Bols Cacao Brown and 0.5 grs of Sodium Alginate in one recipient and mix well until dissolve. Let it rest and refrigerate. prepare a Calcium bath with 20 ml still water an 1 grs of calcium, dissolve the powder and let to rest for 30 minutes. Prepare another recipient with 20 ml of clean still water.



THE COCKTAIL: in a Shaker, place 30 ml Bols Genever, 20 ml Bols Cacao Brown, 20 ml Kahlua, 20 ml Espresso coffee ( 1 Shot), 10 ml of Grand Marnier Cordon Rouge and the Orange zest, add ice and shake vigoursly ( For the HOT cocktail, dry shake carefully); Double strain into a double cocktail glass previously chilled ( forget this step for the HOT Cocktail); Slowly place the foam on top and add the coffee pearls on top of the foam. (With a sering, drop slowly the Cacao and Coffee with Alginate into the Calcium Bath, let it stay there for no longer than one minute and then wash it in the clean still water recipient and its ready to use)
